Chicken with Sun-dried Tomato Cream

This recipe is Sunday Dinner-worthy! Don't skimp on anything - it's quick, delicious, and luxurious.

Ingredients

~4 skinless, boneless chicken breasts
~Salt and pepper to taste
~2 Tbl olive oil
~5 garlic cloves, thinly sliced
~1/2 cup white wine
~1 cup heavy cream 1/4 cup sun-dried tomatoes, drained and chopped
~3 Tbl thinly sliced fresh basil

1. Season the chicken with salt and pepper. In a large skillet, saute the chicken in olive oil until browned (about 4-5 minutes on each side).

2. Add the garlic and saute until fragrant (about 30 seconds).

3. Add the wine, cream, and tomatoes and bring to a boil.

4. Cover and reduce the heat.

5. Simmer for another 2-3 minutes.

6. Remove the chicken [Ed note: check for chicken's doneness before removing] from the skillet and add the basil to the sauce. Increase the heat and boil until it thickens (about 2 minutes).

7. Spoon the sauce over the chicken and serve.

Fresco e bello: Make up a pot of fettucini - place the pasta in the center of individual plates, put a chicken breast on top of the pasta, and spoon more sauce over it. A work of art!

It doubles wonderfully (that's actually what I did with it), and if your chicken pieces are large enough, you can cut them in half for smaller appetites. So I would say that it serves 4-6 easily.

I'm not too sure about freezing it, however. With the cream in it, I think it would be an experiment to see how well it would freeze.

I plan on making it more often and bringing it as a new-mother's dinner or a potluck item - although it's pretty fancy for a potluck! :-) But we can always raise the bar on potluck offerings anyway, can't we?

Which brings up a whole new thought that is almost blog-worthy itself: There used to be a time when women brought their best meal to potlucks to showcase their cooking abilities...now women bring their easiest recipe, something that they can throw together in a hurry with their busy lives...at least here in the NW that's how it is!

Ladies, I think it IS time to raise the bar!

I hear you. We attended a church for 5 years, before our move, that has a shared meal every Sunday after church. We were encouraged a few times as a church family to prepare our best meals to share with one another. I grew up with the lovely aroma of beef pot roast wafting to greet us as we opened the front door upon returning from church many a Sunday. Sadly some churches, and we attended them in the past, have used the afternoons following service to have a planning meeting, prayer meeting, prayer planning meeting, etc. I really appreciate what Gregg Harris and others like him are doing to encourage reforms in the local church and family. (Yes, I know, a bit of a rabbit trail, but it's all related.):)

People complain when said meetings are on work evenigns, as well as when they are on Saturdays. They have to be SOMETIME. Frankly, I don't mind the amount of meetings my church has on Sundays.

As for taking best meal to potlucks -- um... At least not in my lifetime? Sometimes people get "known" for taking something specific to potlucks. Distinctive dishes. But they still need to be things that serve lots, divide well, travel well, and will sit and be fine on a table! (I made the mistake of taking Bar B Q ribs in the crockpot one year. It just didn't work well because it didn't divide up so lots of people could take bits)

OTOH devilled eggs I ONLY see at potlucks (And same when I was growing up) and they are really fancy.

I appologize if my comment sounded judgemental or uppity. I thought Karen's recipe sounded like a great shared meal dish, if you cut the chicken smaller as she suggested. I agree with you, some dishes are certainly better choices than others. And the time I brought chicken and black bean stew was more my "best" than the time I picked up a box of frozen corn dogs. :) (sometimes you gotta do what you gotta do!) (Best meaning prepared with creativity and thought, rather than expensive and formal.)
As for meetings, different churches do it differently and I'm glad you like your church.

Karen,
This recipe sounds delicious! After reading the comments here, I was thinking you could even take this recipe and cut the chicken in chunks and serve over rice, orzo, couscous or noodles, kind of like a "stroganoff" (spelling?)
That way it would stretch some.
Our church doesn't usually do potluck dinners, but maybe as we pray about it the Lord will stir us up in that direction! :o)
It sounds like a great time for fellowship and building with one another.

Hey! Me again...it's now fall of 2008 and I am still coming here to get your recipe! Yumm-o! ;) Having it for Adam's b-day...his request!
